Moist Vegan Spiced Loaf cake recipe ( dairy Free adaptable & Reduced Sugar )

It’s that time of year again, for warm cosy nights in All things Spiced & Delicious.

Now this is a first for me and there’s always a first time for everything. I decided to give vegan baking a try something completely new to me.

Someone was kind enough to share one with me, A supermarket but I adapted & changed a few things to my needs because I didn’t wanted all the added extra ingredients.

After trying out my own recipe I’m pleased to say it came out better than I had hoped.

It’s Completely vegan and totally adaptable for anyone wishing to use it.

I did add raisins to mine but you can add what ever you wish to yours. 


4 tbsp of golden syrup 

120ml Almond Milk or Soya if you have nut allergies) 

30ml oil

50g sugar 

160g Self raising flour 

1 tbsp of vanilla essence 

1 tsp of cinnamon 1 tsp of all spice 1 tsp of ginger 


1. Set oven to 170 ( Fan assisted ) 

2. Set aside 1 loaf tin lined with baking parchment 

3. Add the milk oil vanilla essence & golden syrup into a bowl & mix well so it doesn’t separate. 

4. Then add the sieved flour spices and sugar into another bowl stir so it’s blended well.

5. Make a well Add the wet mixture to the dry & mix well till combined.

6. Pour into prepared cake tin.

7. Bake for Approximately 30-40 or until skewer comes out clean.
Leave to cool for 30 minutes before removing from the tin to cool completely.

Prep time 20 minutes baking time 30-40 minutes Total Time 60 minutes 

The best thing about this bake for me was that my other half didn’t even notice the difference because I didn’t say it was Vegan until afterwards.

If not serving on the day ( Whaaaat I did not Just say that) forget that I did who does that anyway Haha 😂 

No seriously! If you do Once completely cooled removed baking paper carefully & Place it in an airtight container & place in the fridge to firm up so it slices better. ( Plus cake always taste better the next day. )

Travelling and holidays

Schools out for summer ! My 5 must have essentials for travelling 

Hey guys, 

So that’s it schools out for summer! 

Gosh who doesn’t remember being excited For prom, leaving that year or stressed about exam results and looking forward to having 6 whole weeks to have time out

And going on a break with family or friends whether it was on a caravan holiday or going abroad. 

So I Thought I’d share my “Always be prepared” 5 essentials when travelling” 

We’ve both been to many places on holiday Like many of you have over the years 

Isle of wight, Norfolk broads, Spain,Maldives,portugal, Egypt,

 (dreamt of going to Australia maybe one day)

And Now our next stop thanks to my amazing other half, quite a few months ago before Christmas only went and won us 2 tickets to New York Baby

NEWWWW YORKKKK of all the places. 

😆 I know right! 

We just couldn’t believe it so we’ve booked a time to go pretty soon and well….
One things for sure we definitely need essentials on holiday.
1. Comfortable shoes & hat: I never travel without A hat or some comfy shoes and my go to hat for quality is Loud Elephant because each one is unique quirky and stylish.  I also choose Adidas high tops for long walks or comfy converse low tops for summer choosing between the 2 depending on the weather. 

2. A Decent Suitcase:

I currently have a blue borderline one but so need to get a new one as it’s been with me for 10 years and isn’t up to scratch no more the other half always uses his trusty samsonite. 

3.toiletries & meds 
Another is Certain Toiletries & meds A must that you can’t not take! Plus my other half always makes sure we’re organised.

We always take the following
Imodium, insect repellent, headache medi stick a mint roll on (it works wonders) & anti bacterial Hand gel. 

4. teabags 
Because let’s face it! you can never get a decent cuppa abroad & who doesn’t love a proper cuppa (we do) 

5. Reading material
depending on your destination. If it’s a city break you’ll be to busy sightseeing. I love a good book whilst I’m awáy on a beach chilling which we haven’t done in forever.

So there’s my top 5 essentials for travelling. A pretty basic post but there you have it.

Celebrating 40 years of the Rainbow Flag 

It’s been a while since I’ve blogged with many factors as to why 

Last year, I created a design to celebrate & mark 40 years of the rainbow flag for this year.

A piece combining both things that Inspired me the rainbow flag & the Quote by Maya Angelou “Be a rainbow in someone else’s cloud” 

A lady who was a world renowned Poet, author, and activist but also an LGBT Advocate. 

So using her positive quote which many of you may have heard over the years & the flag was and turned out to be a “big hit” with many of you worldwide.

So I made 40 of these to mark the occasion & to date since its launch in February 2018, we’ve sold nearly all of them, Each one comes with its own Coa Numbered Card. (Pictured below) 

One of our many customers included Jamie From Collabro (pictured below) wearing his with pride, before heading off to his rehearsal for the Olivier awards recently.

Rum Raisin & Spiced Choc coconut cream Sandwich biscuits 

It’s biscuit week! week 2 of the New great British bake off  (without Mel sue & Mary) but it isn’t all that bad after all, even if we do miss them. It’s all about the bake & the bakers it’s tense & funny plus always great to see what each bakers capabilities are each week.

Now I love a biscuit & an excuse to bake along with the bake off even more so as many of us are doing and sharing it on twitter using the hashtag gbbotwitterbakealong created by thebakingnanna1 & robcallen 

So This week I decided to make my own signature bake Called “Perfect Match”.

Some bakers this week had a story to tell about theirs and I have one of my own.

Me & my partner are not only a “perfect match” But everything in the biscuits I made are some of what we love. Spicy food,rum & we like having a laugh hence the fruit & nutty part of the bake.

So anyway 

I created a 2 tone flavour sandwich biscuit & this was the recipe in case you feel like making them yourself.

Rum raisin & spiced chocolate coconut cream sandwich biscuits 

rum & raisin shortbread ingredients:

85g plain flour 

Sugar 27.5g

60g Unsalted Butter

30g raisins


Spiced chocolate shortbread ingredients :

85g plain flour

27.5g sugar 

1tsp of all spice 

20g of cocoa powder or 2 tbsp 

60g unsalted butter 

Coconut buttercream Filling:

1 sachet of coconut cream 

Softened Unsalted butter 100g

200g icing sugar 

Add all in ingredients to a bowl & use an Electric whisk.

If you prefer to cheat with your filling just buy a tub of bounty spread to save time.

Ingredients make approximately 12 bite size of each batch of shortbread, and you can Double the ingredients if you want bigger biscuits or more bite size ones.

Method for shortbreads: 

In seperate bowls 

1. Cream softened unsalted butter and sugar together

2. Add the flour and lightly mix (for chocolate shortbread blend in the cocoa powder too)

3. Then drain excess rum off & Add Pre Soaked seedless raisins in 4 tbsp of rum for a about 2 hours. (Exclude this part for chocolate shortbread) 

4. Bring together all ingredients by kneading into a ball dough.

5. Roll out thin discs (dough may well be a tad sticky) if so sprinkle a little more flour to stop sticking & cut out using a small cookie cutter. 

6. place on baking tray & Use 1 of 2 baking trays needed lined with brown baking paper. 

7. BAKE! For 20 mins FAN Oven 170C until golden 
Once done remove from oven & leave to stand for 5 minutes to cool then place immediately onto a baking tray to cool completely.

Finishing touches:

spoon or pipe a small layer of buttercream on one side of 12 biscuits then sandwich together.

Dust with cocoa powder Then simply tuck in & Enjoy

So as the seasons have changed and our styles do too, It’s time to think about dusting off your favourite coat,scarves and digging out accessories OR buying new.

Whether your the kind of person who wants to be on trend Or a trend setter. The difference between the two varies – those who follow the crowd or those who find their own unique style.

including Shopping in your favourite stores Or local in quirky small businesses from the bakers,butchers,cafes & designers of all trades, Online as well as on the high street.

Getting my art mojo Back

I’m thrilled to have finally after many many years to pick up a pastel,paintbrush and Paper and start getting arty once again.

I’ve often get asked many things, some of them being Did you make that & how did you make that? Or Where did I learn it? 

Well the answer is,

I always saw myself as a child finding time to draw & stop & observe the skies as I lay on the grass in the summer & enthusiasm for art at school my baking side of me and just General flare for being creative.

They say kids go through phases as they grow up but my creative side never left me. 

Especially my love of drawing,painting,learning the keyboard (but failed to learn that) but being creative from working with my hands like woodwork, art class, music and home economics and now that I’m in my 30’s everything except the making music (except listening & loving it of course) 

has stuck with me because since I hit my teens I’ve continued to still be enthused by baking,creating my own jewellery,drawing & painting.

I still always find time to stair at the skies, admire the wild animals. I’m often found staring through the kitchen window watching the birds. unless I’m baking something delicious for family & friends that is.

so in all honestly I’m self taught and you can’t always teach certain things, you pick them up and your own unique style and talent by teaching yourself and learning as you go.

It’s literally been years since I painted or drew anything, except for when I’m designing a piece of jewellery for friends family or a customer, or a cake even like this year I made my mother a celebration cake with her favourite childhood character featured on it…

Bagpuss! but that’s another story.

but honestly it’s nice to see that I can still pick up a pencil etc and still create something be it landscape or abstract. 

My mum recently saw my art I’ve been creating for months & she saw one piece in particular she loved, so much so it was My first one I did called “hillside meadow” an original pastel painting. The first thing she said was “I’d have that on my wall, can you do me a print and sign It for me?

This is the first piece I did 

since then I’ve produced, many pieces and some lovely upcoming small collections. 

my first personal piece I created is this a pride of place George Michael print my best friends words were ” I’m having that on my wall ” 

I’ve also sold my first art print as of this month & done 2 art commissions. 

 So I’m really happy to say it’s truly great to be getting my mojo back and getting stuck into my art side once again.

Oh so Quick Easy Chewy Flourless chocolate Cloud egg cookies 

I don’t need an excuse to bake 

well.. that is unless your best mate says to you like you didn’t already know, wheat and flour is so bad for you.

So I just said how do you like your eggs? “Fried,scrambled none none of that new cloud egg or faff surely., his reply “anyway they come” 

So what did i do Well a flourless bake of course, haha! So I’m basically Winning already.
so the other day I whisked myself off to the kitchen & made a small batch of flourless chocolate cookies.

flourless Really? Ohhhh yes! and so Soft and chewy airy cloudy like & springy with crispy chocolately outer shell and soft centre of Yummyness. It’s similar to that of a brownie texture.

To make them you’ll need: 


150g icing sugar

40g of unsweetened cocoa powder

2 egg whites 

1 tsp of vanilla essence 

100g of sultanas ( i used currants) But you could adapt and add chopped Cherries,chocolate chips, nuts or what ever you wish.

Optional extra topping caramel drizzle 


1. Combine the icing sugar, cocoa powder stir until Add egg whites including vanilla & whisk until smooth. 

3. Fold in the sultanas 

4. prepare a lined baking tray 

5. Spoon onto a baking tray (leaving plenty of room around each one as they will spread out quite a bit)

Makes around 8 to 12 cookies depending how big you want the cookies

Preheat the oven to 160c Fan for 12-16 minutes.

Once baked allow to cool before removing from the tray

Then just Tuck in & enjoy
